I had a craving for steak yesterday so I picked up some sirloin tip steaks and looked through my C.I. cookbook to see what I could make. I settled on Simple Pan Seared Steaks with Mustard Sauce. Basically you fry up your steak the way you want in a spoonful each of oil and butter. When its done, set it aside then wipe out the oil and use the pan to make your sauce. Boil 1 1/2 cup chicken broth until reduced by half. Add 3 tbsp dijon mustard and 2 tbsp of butter, salt and pepper, then pour over your steaks. OMG delicious!
I made Greek Style Garlic Lemon Potatoes to go on the side. You cut 2 lbs yukon gold potatoes into 8, fry them in half oil, half butter about 5-6 minutes on each side, then cover and steam for 5 minutes. In the meantime you make the sauce which is 2 tbsp fresh oragano, 4 minced garlic cloves, 1 tbsp olive oil, 1 tbsp grated lemon zest plus 2 tbsp lemon juice, 1 tsp salt, 1/2 tsp pepper. I made everything with dried herbs, cutting down the measurement by about half, plus left out the zest. The recipe still has tons of lemony tang. When the potatoes are cooked just pour the sauce over them and cook until heated through. Top with fresh minced parsley. These potatoes are amazing! I can see myself getting obsessed with them for the next couple of weeks! lol
