Pre-cooked Chicken Ideas, and Homemade Salad Dressing

With a small baby in the house it can be a challenge sometimes to cook every meal from scratch (check out my bread making post as an example). Before my daughter came along, I used to eat a lot of pre-cooked chicken breast in salads and sandwiches, but it’s expensive. I realized that it’s cheaper to substitute boneless, skinless chicken thighs in many recipes. I seasoned a family sized package of the thighs with salt and pepper and baked them in the oven, cooled them and froze them for later. When I need them I just defrost them in the microwave for 3 minutes. Here are a few ideas on how to use pre-cooked chicken.

Chicken Quesadillas – just top a flour tortilla with salsa, chicken and grated cheese, top with another tortilla and bake until hot. Cut in to wedges and serve with more salsa and sour cream.

Mini Chicken Pizzas – make your own mini pizzas or use store-bought cheese pizzas and add chicken and your favourite toppings. For a healthier alternative, use small pita breads as the crust.

Chicken Salad Sandwiches – mix together diced chicken, mayo, chopped celery, and chopped onion and sandwich between two slices of bread.

Green Salad with Chicken – I like to use spinach, strawberries, walnuts, feta cheese and honey mustard dressing.

Mandarin Chicken Salad – add slivered almonds, mandarin oranges, chow mein noodles (optional) and sesame dressing.

 

Salad dressings are super easy to make. Here are a couple of recipes.

 

Honey – Dijon Dressing

½ cup vegetable oil

1/3 cup honey

¼ cup lemon juice

1 Tbsp Dijon mustard

Shake all ingredients in tightly covered container. Shake before serving.

 

Oriental Dressing

1/3 cup rice, white or cider vinegar

¼ cup vegetable oil

3 tbsp soy sauce

1 tbsp. sesame seeds (optional)

2 tbsp dry sherry or apple juice

1 tsp grated ginger or ¼ tsp ground ginger

2 drops dark sesame oil

Shake all ingredients in tightly covered container. Shake before serving.

  1. I was just trying to think of things to do with chicken and then surf-stumbled over to this post. Now I’m going to go cook some chicken (if the kids let me. 😉
