You know how when you get to the bottom of the cereal box there’s all that crushed cereal leftover – I feel guilty throwing that out. There must have been about a cup of crushed Mini-Wheats at the bottom of my box today so I wanted to find a way to use it. I remembered I had butterscotch chips left over and voila! Haystacks! They are one of the simplest treats to make and they’re surprisingly scrumptious. I replaced the chow mein noodles with the crushed Mini-Wheats with no complications (scaled down amounts of course). And the best thing is – Mini-Wheats are healthy 🙂 I think I’m going to rename them “Mud Pies”. And they could probably be used for those Easter bird nests I keep seeing all over Pinterest.
Haystacks / Mud Pies / Bird’s Nests
1 (12 oz.) pkg. chocolate chips
1 (12 oz.) pkg. butterscotch chips
2 lg. cans chow mein noodles (or equivalent amount of crushed Mini-Wheats)
1 c. peanuts (optional) or try raisins or any dried fruit or nuts will also work
Melt chocolate and butterscotch chips together. Pour over noodles and peanuts. Drop by teaspoon on waxed paper. Cool and store in air-tight container.
