Paleo Chocolate Icing

I think my search for healthy icing has ended! I just threw this together without really measuring, melted it together in the microwave and it worked. I used it to top a 2 minute mug brownie and it was amazing! It has all the chocolateyness (yes I know it’s not a real word but it fits) and smooth, creamy mouth feel of a buttercream without all the sugar or saturated fat. I highly recommend it. If you’ve tried the homemade Magic Shell ice cream topping, it tastes like that but creamy. Thank-you Elana’s Pantry 🙂

Paleo Chocolate Frosting

1 cup dark chocolate chips
⅓ cup coconut oil
1 tablespoon vanilla extract

In a small saucepan over very low heat, melt chocolate and coconut oil
Stir in vanilla extract
Place frosting in refrigerator for 15-30 minutes to thicken
Remove from refrigerator and whip frosting with a hand blender until thick and fluffy
