These no-bake cookies are from www.eatingwell.com. They are the quickest and simplest of the healthier desserts I found, and probably the most satisfying. I didn’t have whole wheat graham crackers so I used about 1/2 cup of regular graham crumbs that I had in the cupboard. It seemed to work well. Mine were quite soft, sticky on the outside, and sweet. I rolled them in cocoa at the end and topped with the coconut. Although they don’t look like much, I highly recommend these – but be careful with portions because they’re not exactly low-cal! 313 calories per 2 cookie serving.

8 whole-wheat graham cracker squares, finely ground
1/4 cup raisins
1/4 cup smooth natural peanut butter
2 tablespoons plus 2 teaspoons honey
4 teaspoons unsweetened coconut
Combine ground whole-wheat graham crackers, raisins, peanut butter and honey in a small bowl. Pat into 8 cookies and press lightly in coconut.
