Bourbon Chicken

I don’t know why I fall for Pinterest hype. Every recipe posted is “the greatest thing you’ll put in your mouth!!!” lol I was lured by the simplicity and sweet appeal of this recipe. Tried it…it was good but not blow your mind fantastic. I made it on the stove top instead and  simmered it for about 45 minutes. And it doesn’t include vegetables, so I added some orange peppers at the end which I think complemented the sweet sauce. Maybe it would have been better if I made it in the slow cooker. If you’re looking for something super easy and a little different to make today, give it a try but don’t expect it to change your life. Teehehee!

1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1/4 cup light apple juice
1/3 cup light brown sugar
2 tablespoons organic ketchup or chili sauce (depending on how hot you like stuff)

1/3 cup reduced sodium soy sauce

Whisk all ingredients into crockpot and add chicken. Cook on low for 8 hours or high for 4.

  1. What would the serving size be for this recipe? Would it serve 6 or 8?
