I am terrible for baking a batch of cookies then sitting down and eating about 8 of them at once. I can’t be trusted around baked goods at all! When I saw a recipe on Facebook for 3 ingredient peanut butter bars and noticed the ingredient ratio I knew I wanted to make a single serving version. Keep in mind these cookies aren’t low fat or low calorie. They’ll set you back about 235 calories, without the chocolate chips, but they are much better for you than a chocolate bar or packaged cookies because they are made with honey instead of sugar and contain fiber from the oats, plus good fats from the peanut butter. If you’re trying to cut down on sweets then this will kill those cravings fast without completely blowing your diet. The only trouble is, they’re so yummy and easy to make, you have to resist making more!
Single Serving 5 Minute Cookie
1 Tbsp all natural peanut butter
1 Tbsp honey
3 Tbsp quick cook oats
Mix peanut butter and honey together in a small bowl or cup, microwave for about 15 seconds. Stir in oatmeal then form into a cookie.Top with a few chocolate chips if you like. Cool in the fridge for 5 minutes ( or eat warm if you can’t wait).
