Summer’s not over yet so here’s another yummy beach babe recipe from the Tone It Up girls! It calls for shaved coconut and their own brand of rice protein but I used unsweetened shredded coconut and vanilla whey protein, and it worked out just fine. They’re packed with protein so you’re satisfied with just one. And an added bonus – they don’t have a lot of liquid like fruit juice pops so they don’t drip all over the place when you’re eating them. 🙂 Notice the tiny tot in the background. She swiped mine and had it in her hand for about 15 minutes before it disintegrated!
Coco-banana Cream Pops
Makes about 4.5 full-sized popsicles
1 cup coconut milk
1 ripe banana
1/2 cup plain Greek or soy yogurt
1 packet or scoop of Perfect Fit Protein
2 tbs unsweetened shaved coconut
1 tsp coconut oil
pinch sea salt
In a food processor or blender, blend together banana, yogurt and coconut shavings. Add in coconut milk into a bowl and whip together. Pour into your popsicle molds and freeze overnight!
