Lazy Low-Carb Chicken Stew

I’ve made a version of this using uncooked chicken breast, but I had a package of grilled chicken in my fridge that I never got around to using so I decided to add that instead. This whole dish came together in a little more than half an hour and the only thing I needed to chop was the onion and garlic. It’s deceptively simple and it tastes really good!

Lazy Low-Carb Chicken Stew

1 pk of grilled chicken strips

1 can of diced tomatoes

1 can of white beans, drained

1- 2 cups of chicken broth

1 onion, diced

2 garlic cloves, minced

1-2 Tbsp olive oil

Couple of handfuls of baby spinach

Italian seasoning, to taste (1 tsp or so)

Chop your onion and garlic. Sauté the onion. in the oil until soft – about 5 minutes. Add the garlic and cook until fragrant – about 1 minute.  Add the rest of the ingredients and bring to a boil. Turn the heat down and simmer for about 20-30 minutes until the soup thickens and tomatoes are cooked. Stir in spinach ( it will quickly wilt). Serve and enjoy!
